If you’ve been following me for a while then you’ll know that my BF won me over in our early dating days with his famous “NOatmeal” recipe (I highly recommend giving this recipe a try if you haven’t already).
Well, just when I thought that dating this man couldn’t get any better, BAM–he puts on his butt accentuating track pants (again!) and makes me these mouth-watering wings.
These wings will warm your soul (and mouth!), so don’t wait too long before giving this recipe a try!

Preheat oven to 375F and line baking sheet with parchment paper.
Place wings on tray and cook for 20-minutes.
While wings are cooking add almond butter, Frank's Red Hot, avocado oil and coconut aminos to a small sauce pan and heat over medium. Mix until everything is smooth and combined (roughly 5-minutes). Add a touch of water if sauce is too thick.
Take wings out of the oven, flip and coat with sauce. Then place back in the oven for 10-minutes.
Repeat step 4 one more time.
Remove wings from the oven for the last time, flip and coat one more time.

I never thought I’d see the day where a chicken burger would find its way to the top of my list of favourite dishes, but the day has come.
I didn’t think much of these sticky patties as I cursed at them while struggling to roll them into balls. BUT after just one bite of this golden burger with cilantro aioli, I thought I was eating a chicken nugget! The combination of flavours was bang on – and for all the cilantro haters out there, you could hardly even taste it.
I had a big bag of organic zucchini from Costco in my fridge, so I got a little creative and made some tasty zoodles as a base for the chicken burgers. It turned out to be a great complement to the burgers.

What you need for Chicken Burgers with Cilantro Aioli & Zoodles:
Chicken Burgers with Cilantro Aioli & Zoodles is a tasty dinner recipe that you'll want to make time and time again! These golden burgers are easy to make and taste like chicken nuggets, but they're way healthier for you. Gluten, grain & dairy free + low-carb, keto & paleo. AIP version provided.
Add mayo and cilantro into a small bowl and mix together. Set aside in fridge until ready to serve.
Burger Patties
Add all burger patty ingredients into a bowl and combine using your hands.
Form 4 large burger patties. Once you've flatted the patty, press your finger into the center to form an indent in the patty (this will help cook the center of the burger).
Cover bottom of frying pan with avocado oil and set temperature to medium-high.
Add burgers to pan when oil is hot and cook over medium heat, flipping occasionally. Burgers should get golden as they cook. Cooking time will vary based on the thickness of the burger (~10-15 minutes).
Zoodles
Spiralize zucchini and set aside in a bowl.
While burger patties are cooking, use a separate pan and sauté garlic in olive oil until fragrant (medium heat).
Add in zucchini noodles and toss using tongs to coat noodles in oil.
Add salt and pepper and continue to toss. Cook for 5-minutes then transfer to plates.
Add chicken burgers on top of zoodles, top with cilantro aioli (or other toppings of choice) and enjoy!
Notes
For AIP version: Omit cumin in burger patties and the cilantro aioli topping. Instead top burger patties with AIP friendly burger toppings like sliced avocado (or guacamole), pickles, onions, etc.

2hard boiled eggs, cut in half , (omit for AIP version)
1avocado, skin removed, cut in half
1/2cupcherry tomatoes, cut in half, (replace with olives for AIP version)
1packsliced mushrooms
1smallred onion, sliced
8cupsspring mix salad
1tspbalsamic vinegar
1tspavocado oil
Sea salt and black pepper, to taste
Chicken marinade
1garlic clove
1tbsplemon juice
1tbspavocado oil
1/2tspdried basil
1/2tspdried oregano
1/4tspsmoked paprika, omit for AIP version
1/2tspsea salt
1/2tspblack pepper
Salad dressing
4tbsp.extra virgin olive oil or avocado oil
2tbspbalsamic vinegar
1tspdried basil
1/2tspdried oregano
Sea salt , to taste
Instructions
Chicken
Preheat oven to 425F.
Add ingredients for chicken marinade to blender or food processor and create a marinade for chicken.
Coat chicken thighs in marinade (Optional: Let marinate overnight or for a few hours if possible) then bake for 30-35 minutes. Prepare other items below while chicken cooks.
Onion & Mushrooms Sauté
Using a stove top pan, heat 1 tsp avocado oil then add onion and mushrooms.
Add 1 tsp. balsamic vinegar and sea salt.
Cook over medium-low heat until all pan juices have cooked off. Cover and keep warm.
Salad
In a large bowl, toss spring mix salad with salad dressing ingredients.
Divide salad onto two plates. Add cherry tomatoes, avocado, eggs, onion/mushroom sauté & chicken thighs. Top with fresh ground black pepper.
How to make perfect hard boiled eggs
Place eggs in a pot and cover with cool water by inch.
Bring water to a boil over high heat.
Once water begins to boil, remove pot from burner and allow eggs to cook in the pot of hot water for 8-10 minutes.
Drain water and immediately run cold water over eggs until cooled.
Peel and enjoy in your favourite recipe or on its own.
