I don’t know about you, but stuffing is by far my favourite Thanksgiving dish!

Traditionally, my family prepares stuffing with bread, which really sucked when I stopped eating grains years ago. I refused to give up my favourite Thanksgiving side so instead, I created a stuffing recipe that’s not only grain free and healthy, but that my whole family enjoys too!

Ingredients
 

  • 1 lb sausage stuffing, Italian or regular
  • 6 strips bacon, sliced
  • 2 pastured eggs, beaten
  • 2 sweet potatoes, diced
  • 5 stalks celery, chopped
  • 1 onion, chopped
  • 1 pack mushrooms, sliced
  • 1 cup pecans, chopped
  • 1/2 cup sliced dates, optional
  • 1/2 cup vegetable broth
  • 2 tbsp white wine
  • 2 tbsp avocado oil
  • Sea salt and black pepper , to taste

Instructions
 

  • Preheat oven to 375.
  • Bake sweet potatoes in avocado oil, sea salt and black pepper for 30 min. Set aside in a large bowl.
  • Over medium heat, cook bacon in a large frying pan until fat starts to render.
  • Add onions and cook until soft then add celery and cook for a few minutes.
  • Add sausage stuffing, mushrooms and white wine. Break meat apart and mix well. Cook until sausage is no longer pink.
  • Add meat mixture into bowl with sweet potatoes.
  • Add pecans, dates, broth, eggs, sea salt and black pepper into bowl and mix well.
  • Place mixture into a 9x13 baking dish and bake at 375 for 20-25 minutes.

Notes

  • If you can't find sausage stuffing, then just remove casing from regular sausage.

Ingredients
 

  • 1 lb grass-fed ground beef
  • 400 ml can black beans, drained and rinsed, OR 1/2 lb extra ground beef*
  • 1 large onion, chopped
  • 1 red pepper, deseeded and chopped
  • 1 jalapeño pepper, deseeded and chopped
  • 796 ml can fire roasted tomatoes (or regular), diced
  • 2 cloves garlic , finely chopped
  • 2 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp sea salt
  • Fresh ground pepper, to taste
  • 2 tbsp avocado oil
  • 1 cup filtered water

Toppings (optional)

  • 4 wedges lime
  • 4 tbsp. goat sour cream, or coconut kefir (dairy free version)
  • 1 handful cilantro, finely chopped
  • 1 small bag plantain chips

Instructions
 

  • Over medium heat, sauté onion and garlic in ghee or avocado oil (~2 minutes).
  • Add red peppers and jalapeño (~2 minutes).
  • Add all spices and sauté until aromas begin to surface.
  • Add ground beef and allow meat to brown (~2-4 minutes).
  • Add tomatoes, black beans and water then bring to a boil for 5 minutes.
  • Lower heat, cover and let simmer for ~1.5 hours OR throw everything into a slow-cooker and set at low for 8-hours or set at high for 4-hours.
  • Top each chili plate with a lime wedge, 1 tbsp. sour cream/coconut kefir, a sprinkle of cilantro and/or a few plantain chips.

Notes

*If you're following a paleo, low-carb or keto diet, you can modify this recipe by replacing black beans with 1/2 lb more ground beef.

Turmeric Basil Hard Boiled Eggs (Keto, Paleo)

5 steps to perfect hard boiled eggs

1. Place eggs in a pot and cover with cool water by an inch.
2. Bring water to a boil over high heat.
3. Once water begins to boil, remove pot from burner and allow eggs to cook in the pot of hot water for 8-10 minutes.
4. Drain water and immediately run cold water over eggs until cooled.
5. Peel and enjoy in your favourite recipe or on its own.

INGREDIENTS: (serves 1)
2 hard boiled eggs
1 tsp. extra virgin olive oil
1/2 tsp dried basil
1/4 tsp turmeric powder
Sea salt and black pepper to taste
