  • It uses fire roasted tomatoes which adds extra flavour, but regular canned tomatoes works great too.
  • The end result is absolutely delicious and soul warming! Best part is, leftovers taste just as great–if not better!

Ingredients
 

  • 1 lb grass-fed ground beef
  • 400 ml can black beans, drained and rinsed, OR 1/2 lb extra ground beef*
  • 1 large onion, chopped
  • 1 red pepper, deseeded and chopped
  • 1 jalapeño pepper, deseeded and chopped
  • 796 ml can fire roasted tomatoes (or regular), diced
  • 2 cloves garlic , finely chopped
  • 2 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp sea salt
  • Fresh ground pepper, to taste
  • 2 tbsp avocado oil
  • 1 cup filtered water

Toppings (optional)

  • 4 wedges lime
  • 4 tbsp. goat sour cream, or coconut kefir (dairy free version)
  • 1 handful cilantro, finely chopped
  • 1 small bag plantain chips

Instructions
 

  • Over medium heat, sauté onion and garlic in ghee or avocado oil (~2 minutes).
  • Add red peppers and jalapeño (~2 minutes).
  • Add all spices and sauté until aromas begin to surface.
  • Add ground beef and allow meat to brown (~2-4 minutes).
  • Add tomatoes, black beans and water then bring to a boil for 5 minutes.
  • Lower heat, cover and let simmer for ~1.5 hours OR throw everything into a slow-cooker and set at low for 8-hours or set at high for 4-hours.
  • Top each chili plate with a lime wedge, 1 tbsp. sour cream/coconut kefir, a sprinkle of cilantro and/or a few plantain chips.

Notes

*If you're following a paleo, low-carb or keto diet, you can modify this recipe by replacing black beans with 1/2 lb more ground beef.

Ingredients
 

  • 1/2 cup coconut flour, sifted
  • 1 tsp baking soda
  • 1/4 tsp sea salt
  • 6 pastured eggs
  • 1/2 cup coconut oil, melted & cooled
  • 1 lemon, zest and juice
  • 1/4 cup honey
  • 1 tsp vanilla extract

Instructions
 

  • Preheat oven to 350F and place liners in muffin tray.
  • Add and mix all dry ingredients in one bowl and all wet ingredients in a separate bowl.
  • Add dry ingredients to wet ingredients and whisk together thoroughly until a thick smooth batter is formed.
  • Distribute batter evenly in the muffin tray.
  • Bake for 25-minutes. Let muffins cool in tray before removing.

Notes

5 steps to perfect hard boiled eggs

1. Place eggs in a pot and cover with cool water by an inch.
2. Bring water to a boil over high heat.
3. Once water begins to boil, remove pot from burner and allow eggs to cook in the pot of hot water for 8-10 minutes.
4. Drain water and immediately run cold water over eggs until cooled.
5. Peel and enjoy in your favourite recipe or on its own.

This Lemon Scallop Salad is a light and fresh salad recipe! It’s easy and quick to prepare with simple ingredients like scallops, arugula and lemon. Enjoy this delicious AIP, paleo & keto salad for lunch or dinner.

Have you ever wondered what the difference is between raw extra virgin coconut oil and expeller-pressed coconut oil?

The main difference is that expeller-pressed coconut oil is more heat stable making it safer for cooking at medium to high temperatures. It’s also flavourless and odorless, so you won’t get a coconut taste or smell infused into your food.

I usually recommend expeller-pressed coconut oil for cooking and baking. Raw extra virgin coconut oil is best used in smoothies, raw/no-bake desserts and snacks.

DID YOU KNOW? The MCFA (medium chain fatty acids) in coconut oil boost your metabolism and help your body use fat for energy, which can lead to weight loss, an increase in energy, accelerated healing and improved immunity.

What you need for Lemon Scallop Salad:

  • 4 dry sea scallops
  • 2 cups arugula
  • Juice of 1/2 lemon

  • Sea salt, to taste

Instructions
 

  • In a stovetop pan, heat coconut oil over medium-high heat.
  • Place scallops in pan (scallops should sizzle once they hit the pan), reduce heat to medium and cook for 3-4 minutes per side.
  • Once scallops are cooked, turn off heat and squeeze half a lemon into pan and coat scallops in the juice.
  • Place arugula onto a plate and top with scallops, pan juices, olive oil, spices and sea salt.
  • Toss ingredients together and enjoy!

Notes

  • Feel free to swap out herbes de Provence for different spices or herbs. Thyme, tarragon, parsley, chives and basil pair nicely with scallops.

How to store arugula

  • Store arugula in cold and moist environment, 32°-40°F (0°-5°C) and 95 percent relative humidity.
  • Wrap leaves in a cloth or paper towel and place them in a perforated plastic bag in the vegetable crisper section of the refrigerator.
  • Arugula will keep in the refrigerator for about 10 days, but it will be most flavorful if used before 6 days.
  • Arugula leaves that are stored too cold or too long will begin to wilt, and develop yellow and brown spots.

Instructions
 

  • Place arugula, sprouts and avocado into a bowl.
  • Add, olive oil, vinegar, herbs/spices and sea salt into a small jar and shake.
  • Pour into bowl with other ingredients and toss together.
